5 year old Cake

If you have food allergies like I do, you relish everything you have that is made for you. When we had our Minnesota Reception 5 years ago, John and I had a cake made for us at Jerebek's bakery in St. Paul. It was amazing because we were able to drop off a special shortening that I can eat, dairy free, soy free, and they used it to make the cake. Perfect! Well naturally we saved the anniversary cake. Well we actually saved quite a bit of cake, but this happens to be the anniversary cake. Every time we went to visit we had old wedding cake. This one is the last, but the best preserved. How did we do it? Well the cake was wrapped in ziplock press and seal wrap then saran wrap. Then placed back in the baker's box. Then the baker's box was wrapped in the press and seal, and then wrapped in packing tape and then another layer of press and seal and saran wrap. When we took it out of the freezer there wasn't a single spot of freezer burn on the whole thing! Once it was thawed, it tasted just as good as we remember. Yes I broke the diet for a night, and then was very careful of how much I ate at a time for the rest of my trip. It was a pretty awesome treat.
